A project born over 14 years ago, in 2011, with great belief, grit, passion, and determination.
Today it is a valuable reality, recognized and respected locally and in the international tourism sector, a project that continues to grow with great commitment and a spirit of renewal.
The restaurant is a former convent, exuding an intriguing appeal amidst its exposed stone walls steeped in history. Originally, the restaurant was named “St. Remy,” chosen out of respect for the historic and already well-known name of the place, dedicated to the Bastione Saint Remy, located nearby in the beating heart of the city: Cagliari.
Today, the restaurant has also undergone a rebrand, transforming the names of its two founders into its brand:

Marino and Silvana are one soul, united and complicit in life, work, and heart,
in hardship and success, in passion and choice.
Over the years, they have dedicated so much effort and care to the restaurant’s historic walls—constantly improving its aesthetic and functional appearance—and have given so much energy to the soul of this place, which has reciprocated, it is said, with great satisfaction.
INTERNATIONAL experience in hospitality: MARINO
Marino’s hospitality is reflected in every detail, every element, and is expressed through subtle yet meaningful gestures: order, balance, attention, and high professionalism.
Marino speaks four languages. His vocation is international hospitality, supported by training and experience gained at prestigious hotels in Italy, Switzerland, France, Germany, and England, until his return to Sardinia, to the Cala di Volpe – Porto Cervo.
For him, study, research, and constant updating are the fundamental pillars to guarantee quality and professionalism.
EXPERT in MEDITERRANEAN cuisine: chef SILVANA
Creativity is put at the service of taste, respecting the essence of authentic tastes.
In the kitchen, Chef Silvana—also a beneficiary of significant international experience, always alongside Marino—creates gastronomic journeys where each dish is a tale of authenticity and memory, where technique intertwines with artisanal know-how.
Here, Mediterranean tradition meets research and subtle contemporary influences, maintaining high quality standards, combining a love of Mediterranean flavors
and a desire to showcase local products, as well as a curiosity for the flavors of other regions and distinctive pairings.
Creativity, experimentation, and a love of raw materials are the values that guide the creation of each dish.
EXCLUSIVE, RICH and ever-EVOLVING wine list
In collaboration with leading experts, Marino personally curates the wine list, drawing on his knowledge and extensive experience in the world of wine, as well as his passion and talent: all elements that come together to create an exclusive, comprehensive, and constantly changing selection.
The wine list features a predominance of Italian and French labels, but also niche labels and wines from various production areas around the world.
